Marinated Cucumbers, Onions & Tomatoes

 

 

This summer salad is a simple mix of oil, vinegar, sugar, salt, and pepper with sliced cucumbers, tomatoes, and onions. I like to serve it very cold and often add ice cubes just before serving. Very refreshing on a hot summer day!

Cucumbers are very plentiful and inexpensive during the summer months. If you have a garden, you probably have more than you know how to do. Cucumbers are also incredibly low in calories and have a very high water content. It is a great way to stay hydrated and plump during the summer.

This is a basic and simple recipe that can be easily customized.

Add a handful of chopped fresh dill or a dash of dry Italian seasoning for extra flavour.

Use red onions instead of sweet onions.

Use cherry tomatoes instead of regular tomatoes.

Instead of apple cider vinegar, use rice wine vinegar, distilled white vinegar, or red wine vinegar.

Olive oil can be used instead of vegetable oil.

Peel the cucumber, or leave the skin on.

* Ingredients :

°1 cup of water

°1/2 cup of apple cider vinegar

°1/4 cup vegetable oil

°1/4 cup of sugar

°1 teaspoon of salt

°1/2 teaspoon coarsely ground black pepper

°2 slice options

°3 tomatoes, cut into quarters

°1 sweet onion, sliced

In a large bowl, mix the water, vinegar, vegetable oil, sugar, salt, and pepper.

Add cucumber, tomato and onion and stir well.

Refrigerate for at least two hours. It will be kept for 3-5 days.

I like to add ice cubes to the bowl just before serving. Cucumbers taste great when they are very cold.
